Cheese Straws

1/4 cup butter, softened
2 cups Cheddar cheese, shredded
1/2 cup flour
1/2 tsp. salt
1/8 tsp. ground red pepper, optional
 
Preheat oven to 400°.  Coat a baking sheet with cooking spray.
 
Cream butter and cheese in a large bowl.  Stir in flour and salt.  Mix well. 
 
On a lightly floured surface, roll the dough out to 1/2 inch thickness (about a 6x8 inch rectangle).  Cut into 1/4 inch strips and sprinkle with optional ground red pepper.
 
Place strips on prepared baking sheet 1 1/2 inches apart.  Bake for 10-15 minutes or until crisp.  Makes 24 cheese straws.
