        Cooling down a hot dish

If you need to quickly cool down a hot dish to transport to a potluck dinner, here's an idea.  Place ice packs under a wire rack and rest the hot dish on the rack while you are preparing to depart.  The ice packs will help cool the dish and make it easier to transport .
